Hold down the button half way until you get the square to turn Green. This means it's in focus. Then depress the button fully.
From the small amount of info you supplied in the post, I've assumed you're just not utilising the auto-focus.
Come back if this is not the case.

I found that I get quite acceptable landscape photos but not very good portraits, even when set to portrait mode.

dont forget the photography basics,
photography is all about light, get good light and youll get good pics :)
use natural light if possible, the flash on camera phones is very weak,
try not to use zoom, just move closer to your subject,
use a tripod or something to steady your hand,
if possible allways use the highest quality setting
and use the right mode to suit your subject

also the best way to get a good shot is to take as many shots as possible and then pick the best one. 9 out of 10 times you won't get the perfect shot first try. With an 8gig card this isn't an issue at all. If you're trying to get a good photo just take lots of them from different angles or different distances, this is the key with anything from a throw away to an SLR so just keep trying
