connecting to Wifi

Is there a way you can add your own connections, without having to use the scanning facility? What happens if the SSID is hidden and you would like to connect to that?

I just got the N95, primarily for a trip I am taking to Italy, so I don't yet have a SIM card. Seems to me that I should be able to connect to Internet without the phone enabled. I see the networks (there are a few where I am), enter the WEP key and it asks me to make the connection in offline mode, and voila, nothing, or at least "No Gateway Reply".

It does seem like a remarkable piece of technology, it seems to be able to do everything except cook me dinner.

BTW, any ideas on how to change the sync conduits? I use an old PIM called Ecco.
