Put Quake II on your phone.

Put Joiku spot on your phone (don't tell them though, just ask them to look for a WLAN after you turn it on).

Do anything with the camera (and while you're at it install adnota for geotagging). Show them the integrated uploads to Flickr via share online.

Show them the sports tracker.

Install Fring and tell them all about making free calls/IM's from the phone.

Install internet radio.

Shake SMS and Flipsilent are nice for showing off the accelerometer.

Get some A2DP headphones and laugh at their pathetic neutered bluetooth. For good measure add Salling Clicker and use you phone as a remote for WMP and powerpoint over bluetooth.

Nothing outwardly obvious. Just make use of it in practical situations.

Perhaps show a page of some geotagged photos, in a location you used satnav to get to, And also a bit of video of the place too.

Maybe show them a file of some sort someone sent you via an IM app (sling, etc), the funny bluetooth pictures, etc.

In short, things you actually use your phone for, rather than a very expensive yuppie showoff phone.

Let them take a call on your phone (voice quality much better than the iPhones), while you're busy just using your phone naturally ;]

EDIT: All the stuff I mentioned I do use the phone for...
